Kaiseki spirit and the true value of Hayashi SPF
Our roots lie in a long-established kaiseki restaurant.
As Japanese culinary craftspeople, we pursued the true taste of ingredients and worked with premium pork breeds across Japan.


Our Commitment to Hayashi SPF
Assurance and sweetness
The answer we reached was Hayashi SPF from Chiba Prefecture.
Raised healthy from birth, its meat is finely textured and remarkably clean in fat.
Grain-fed with minimal gaminess, the fat rich in vitamin B1 melts with a fruit-like sweetness.


Cuts from the Chef's Perspective
We read each Hayashi SPF carcass individually, adjusting thickness, grain, and fat balance before shaping every cut.
Loin
The cut where marbling and lean meat are most balanced. Hayashi SPF fat is sweet, releasing depth from the first bite.
Fillet
Delicate in texture and light on the palate. Minimal fat leaves a gentle, lingering sweetness unique to Hayashi SPF.
Shoulder Loin
A contrast of lean flavor and moderate fat. We select the best piece each day after judging its condition.


Our Approach to Frying
Lightness and lingering finish
Each piece is coated in carefully selected coarse fresh breadcrumbs from Japan.
We fry in premium lard at high heat with a bold, crisp technique—golden outside, tender within.
Quality lard never weighs on the stomach; only the sweet finish of Hayashi SPF remains after the meal.


Salt, Sauce, Rice & Miso Soup
First, a few grains of salt
Try a few grains of salt on piping-hot tonkatsu—the sweetness and definition of the meat come forward.
That is the truth of tonkatsu we aim to share.
Our secondary sauce balances sweetness and acidity to harmonize with the richness of the pork.
Japanese rice is steamed to receive the finish of each cut.
Miso soup is prepared every morning as a quiet closing note to the meal.
